You are going to love this Easy Salsa Chicken recipe! Because it is so simple to cook, this is the first recipe I put on my menu for the week after my son was born. It takes a little bit of time for the chicken breasts to cook, but this recipe could not be easier. You just throw 4 ingredients in a pan, stir, cover, and cook! I use a rice cooker to cook the rice while the chicken is cooking, so that makes it even easier!
Ingredients
- 2-3 boneless, skinless chicken breasts
- 1 teaspoon salt and freshly ground black pepper
- 1 16 oz. jar of salsa
- 1 15 oz. can black beans, rinsed and drained
- ½ 16 oz bag of frozen whole kernel corn
- 4 c. cooked brown or white rice
Instructions
- Heat a large, deep skillet (with a lid) over medium heat. Season the chicken breast with salt and pepper. Add the chicken breasts, salsa, black beans, and corn. Stir everything so that the chicken is completely coated, cover the pan, and cook. You may have to turn down the heat once it starts bubbling.
- Cook for 30-40 minutes (depending on the size of the chicken breasts), stirring occasionally.
- Cook the rice while the chicken cooks. (Follow package directions or use a rice cooker.)
- Remove the chicken breasts, and cut into bite-sized pieces. Stir the chicken pieces back into the pan. Add more salt and pepper to taste. Serve over rice and enjoy!
Easy Salsa Chicken recipe details
Start by heating a large deep skillet (that has a lid) over medium heat. I have this large, deep pan from Pampered Chef that I use almost every day. Season the chicken breast well with salt and pepper.
Add the chicken, salsa, black beans, and corn into the pan.
Give everything a good stir, put the lid on and let it cook!
You will want to stir it occasionally (and possibly turn down the heat if it is simmering too hard). I usually stir mine every 10-15 minutes.
While the chicken cooks, I cook my rice in a rice cooker. (My rice cooker takes about 25-30 minutes).
Once you’ve got that going, you’re just waiting on everything to cook!
Once the chicken is cooked through, cut it into bite-sized pieces and stir it back into the pan.
Taste and see if you need to add any salt or pepper. For some reason, I always end up adding some extra pepper to this dish.
Serve the chicken over the cooked rice and enjoy! I like to add a side of my favorite Roasted Broccoli or a side salad so we have some veggies on our plate!
